Eggs 30 Ways – Happy Hour – It’s New Orleans

Do you know that all chefs hats (aka “toques”) are not created equal? Look closely next time you see one and you’ll see they are made up of different numbers of pleats. Each one of those pleats represents a way you are competent at making eggs. The maximum number of pleats in a toque is 30.

Wiley Wilkinson turns out to be a great source of inside-kitchen info like this chef hat thing. Wiley worked her way up from the bottom, slinging salads and bread sticks at Ralph’s on the Park for free, to working for John Besh as a pastry chef before graduating to resting between gigs and hanging out at Happy Hour.

C J Hunt

C J Hunt has two characters for every pleat in a toque. As an improv comedian and actor, C J felt slighted when some Hollywood casting type told him he “didn’t have enough “characters.” So he’s gone overboard, going so far as to be the creeper at the coffee shop who’s staring at you ’cause he’s “working on a character.” On today’s show C J plays the part of the chef who hired Wiley with no experience, among others, including the coffee shop creeper.
